Honey Soy Chicken Skewers
This summer we have been grilling non-stop, coming up with new marinades weekly for meats and vegetables and this honey soy marinade has been a constant favorite. Just make sure whenever you are making a marinade, reserve 1/4 cup - 1/2 cup BEFORE you add the raw meat. I forget to do this often and then end up making a small batch for serving.
This marinade works great for chicken, beef, shrimp and every vegetable possible. Serve these skewers alongside a big green salad filled with handfuls of herbs, a cold cucumber salad. If you need something more filling, make up a batch of rice noodles or rice and double your marinade to serve on top.
Honey Soy Chicken Skewers
Serves 6 skewers
Ingredients:
2 pounds chicken thighs, cut into 1” pieces
1 large shallot, finely chopped
2 garlic cloves, freshly grated
1 cup fresh lime juice
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup toasted sesame oil
2-3 tablespoons honey
Kosher salt + freshly ground pepper
Olive oil, for grill
1 red jalapeño or fresno chile, thinly sliced
3 scallions, sliced
Sesame seeds
Reserved marinade sauce
Process:
In a medium bowl, add shallots, garlic and lime juice, and let soak for 15 minutes while prepping chicken.
Add soy sauce, oyster sauce, sesame oil, and honey to shallot mixture. Taste and adjust seasonings, adding salt and pepper. Reserve 1/2 cup of marinade to use as a sauce for serving! Add chicken to marinade, cover, and refrigerate for at least 2 hours, up to 24 hours.
Preheat grill to medium-high or 425 degrees (a large grill pan can work too). Brush grill with a bit of olive oil.
Remove chicken from marinade, and discard sauce. Thread chicken onto skewers (metal is my preference). Grill on both sides until chicken is done in the middle, about 4-5 minutes per side.
Remove skewers to a serving platter, pour reserved marinade sauce over top along with pepper slices, scallions and sesame seeds.
