Italian Salad with Iceberg Lettuce, Tomatoes and Mozzarella
I made this Italian salad last week served along side Spaghetti, naturally! And the whole family just absolutely loved it. Kids had seconds and asked for the same salad the next night. It's like your old school favorite Italian restaurant style salad, or let's be real, it's a good knockoff of the famous Olive Garden Salad, but better!
This recipe was adapted from Bon Appetit. With the addition of tomatoes and olives, this salad
Italian Salad with Iceberg Lettuce, Tomatoes and Mozzarella
serves 4
Ingredients:
1/2 cup olive oil
5 tablespoons white wine vinegar
1 tablespoon mayonnaise
1 tablespoon sugar
1 1/2 teaspoon dried oregano
1 garlic clove, finely grated
kosher salt and freshly ground pepper, to taste
1 head of iceberg lettuce, halved, and torn into big pieces
1/2 small red onion, sliced into thin rings
1 cup cherry tomatoes, halved
1/2 cup casterveralno olives, smashed
2 ounces parmesan, shaved
1 cup drained mozzarella balls, torn
10 peperoncini, halve
Process:
In a small bowl, whisk together olive oil, vinegar, mayonnaise, sugar, oregano, garlic, salt and pepper. Set aside.
On a platter, place iceberg lettuce pieces. Top with red onion, tomatoes, olives, peperoncini, parmesan, and mozzarella. Drizzle dressing over top and serve.
* This would also be good with a sliced salami, artichoke hearts, and freshly made croutons!
