Raw Brownie Bites

Well I am 27 days into my 35 day challenge. And it is going alright, I have missed 4 days, 2 for being sick and 2 for being lazy! But overall, I am feeling good about it.

So with my challenge still going, and my trip coming up in 8 days, I have been really focusing on what I am putting into my body. In general, I am a pretty healthy eater. I love all fruits and almost all vegetables, but with that being said, I still love my sweets. And yesterday, I NEEDED some chocolate.

These raw brownie bites were just the thing. They take less than 10 minutes to make, which is great, especially with Hudson cruising all over the place. I love that you can keep them in your freezer and pull 1 or let's be realistic, 3 out to eat. Plus, keeping them in your freezer and not on your counter really helps me to not want to eat the whole thing. I have a bit of a control issue sometimes....

* Feel free to use 2 cups of one nut, or change up the nuts, walnuts would be good here too.

Raw Brownie Bites:

8 medjool dates, soaked in water for 20 minutes
2 tablespoons of agave (water can be replaced for a less sweet brownie)
Flaky sea salt, one big pinch
1 cup of almonds *
1 cup of cashews *
6 tablespoons cacao powder
1/2 cup of dried cranberries (cherries would be lovely as well)

Place almonds, cashews, cacao powder and flaky sea salt in your food processor or high powered blender. Mix until powder consistency. Add the soaked and drained dates and agave. Mix well, stopping and pushing down the dough as you go. Add the cranberries, and mix until incorporated.

Line a baking sheet with parchment paper. Using a tablespoon for measuring, form dough balls. Place on parchment paper, here you can sprinkle with extra cacao powder if you would like, and place in the freezer for 15-20 minutes.

At this point they are ready! You can store at room temperature, but I prefer them in the freezer.
