Easy Poke Bowl
EASY POKE BOWL
makes 1 bowl
15 minutes to prepare
Bowl Base Options: Brown rice, soba noodles, or leafy greens
Protein Options: ahi tuna, salmon, tofu, or shrimp
Topping Options: Edamame, avocado, mango, bean sprouts, radish, macadamia nuts, toasted sesame seeds, gochugaru, serrano or jalapenos, scallions, and pickled goods (from ginger to red onions, carrots, radishes and cucumber)
Ingredients
2 tablespoons coconut oil, warmed
1 tablespoon ponzu sauce or soy sauce
4 ounces ahi tuna or salmon, 1” pieces
1/2 teaspoon wasabi (optional)
1 cup of brown rice or soba noodles or 2 cups leafy greens
1/2 mango, diced
1/2 avocado, sliced
1 scallion, thinly sliced
1/4 cup of pickled goods
1/2 teaspoon sesame seeds
flaky salt to taste
Directions
In a small bowl combine the coconut oil, ponzu and wasabi, set aside. In a separate bowl, add the 1” pieces of fish, drizzle with 1 tablespoon of the dressing, and toss together.
In your serving bowl, place the bowl base in first (greens, brown rice or soba noodles). Add the marinated fish, mango, avocado, and scallions. Drizzle with the remaining dressing and finish with a side of pickles and sesame seeds.
