Creamy Coconut Popsicles
I have been on a smoothie kick lately. Lots of green smoothies. Because it's summer and all my kids want to do is go swimming, which basically means I am in a swimsuit every damn day. So smoothies it is, using up my frozen berries from last summer, some bananas, generally a handful of spinach, a little almond butter and playing around with adding coconut milk into the mix. Which is where it hit me one day when I realized I was out of nut butter, smoothie=popsicle! I quickly made a simple walnut honey butter, then proceeded to add banana and a can of coconut milk. And there we have it, the creamiest popsicle EVER. Also, after I filled my tray of popsicles, I had a little leftover, so I added a handful of spinach and a few ice cubes. Blended, and there was breakfast. The perfect green coconut smoothie.
Creamy Coconut Popsicles
makes 12 popsicles
Walnut Butter
3/4 cup walnuts
pinch salt
1-2 tablespoons honey (varies on taste)
Creamy Coconut Popsicles
walnut butter (or 3-4 tablespoons of peanut or almond butter)
1 15 oz can coconut milk (full fat)
2 bananas (you could easily use 1 banana, but we were going for thick and creamy)
In a high powered blender, add walnuts, pinch of salt and honey. Pulse, pushing down the sides occasionally, until blended and to a butter consistency. Taste, and adjust salt and honey portions.
Once the butter is blended, add the coconut milk and bananas. BLEND. Until thick and creamy. Taste, it should taste good. Adjust if needed.
Fill popsicle tray and freeze for at least 4-5 hours. ENJOY.
