Blackberry Mint Cordial
Often times I just like things straight forward, no muss. That is exactly how I feel about this drink. I didn't add a bunch of crushed ice. There isn't lime slices floating in the liquid. I didn't fancy it up with a bunch of mint leaves and flowers pouring out the top. And I did not top it off with seltzer water. I muddled the berries with limes and mint until juicy and fragrant. Added a little sweetener and rum. Served as is. This is a sipping drink. And a mighty good one. Cheers!
Blackberry Mint Cordial
serves 2
1 cup blackberries
1 lime, cut into wedges
10-12 mint leaves
1-2 tablespoons agave (optional)
4 ounces Rum (I used Camp 1805 Backbone Rum)
In a large mason jar (or glass) muddle blackberries, lime wedges and mint leaves together. Making sure to fully juice the limes, and release the oils from the mint. Add the agave (if using) and rum. Give it a quick stir then pour over a fine mesh sieve. Pressing down on the solids with the back of a spoon.
Serve, if desired, with ice.
