Blueberry Spritzer with Lime
I had the most incredible weekend spent with my family. After going through a hard loss last month, we gathered up the cousins and spent the whole weekend together. We stayed up late, drank, ate tons of junk food, made pizzas, cake, floated in the lake, and played cards against humanity. Some of us slept outside on the hammocks, some slept on the back porch, while others took over the couches and the floor. It was everything I needed, and everything I was missing for so long.
Needless to say I am completely exhausted today. Slightly sunburned. And a lot dehydrated. Damn you Smartfood. But it was a great weekend, even if I am barely functional today.
Happy Monday!
I made this summer kid friendly drink for The Fruit Company, enjoy! Adult version, add 1-2 ounces of vodka or rum! OR add a scoop of vanilla ice cream for a blueberry float.
Blueberry Spritzer with Lime
Ingredients
- ½ cup sugar
- 1 cup fresh blueberries
- 2 limes
- 1 cup club soda
Instructions
- Place sugar and 1 cup water into a medium saucepan over medium heat. Stir until the sugar has completely dissolved. Add the blueberries and bring to a boil. Reduce heat to low and simmer for 5 minutes. Strain mixture through sieve or cheesecloth and set aside liquid to fully cool.
- Juice ½ of a lime per glass. Slice the remaining half of the limes and place in the glasses. Fill the glass with crush ice. Pour ½ cup of club soda into each glass. Add 2 tablespoons of blueberry simple syrup into each glass. Give it a good stir and taste. If you like it more tart, 2 tablespoons will be perfect. For a sweeter spritzer add 1-2 more tablespoons of blueberry simple syrup.
