heirloom tomato galette
We have had the busiest last few days. The kids and I went to Portland for a few days, headed to the zoo, had a late mother's day dinner with my family, I got my hair cut (woo-hoo!) and the kids got stocked up in summer essentials. Shorts, sandals and sunscreen. It's always nice to be back in Portland, but when it's just me and the kids, and there are so many places I want to go while we are there, it always feels rushed and hectic. When we finally got back home, I had nothing but piles of work to catch up on. But that didn't stop me from making one of my all time favorite meals, a savory galette.
While you are making the dough, might as well make a few to store. They make the perfect last minute meal, served alongside a salad. OR fill these babies with some fruit! Oh yes, apples, pears, peaches, plums, berries, all of the above, great, great choices.
I shared this recipe last year, with bad photos, but the ingredients and process are still the same. It is so easy to make. And really, any toppings will do. But for me, pesto, tomatoes and goat cheese are the clear winner.
