Sweet Potato Fries with Spicy Mayo

For the past month I have been on a customized body cleanse. Which basically just means that I am eating 90% lean proteins, vegetables, nuts and fruit. Limiting my dairy intake, as well as starches. I say 90% because on days like today, I need a little more. So I took my love for french fries (yes, I said it, I love them. Not fast food french fries, but good french fries) and created a healthier version. Thinly sliced sweet potatoes roasted with olive oil and sea salt. Topped with parsley and my favorite spicy mayo. Because the fries are so good on their own you need very little sauce, if any at all. So here's to eating healthy, with a little bit of naughty every once in awhile. 

Sweet Potato Fries
3 sweet potatoes, peeled and thinly sliced
2 tablespoons olive oil
2 big pinches of sea salt
freshly ground pepper, to taste
1/2 cup fresh flat leaf parsley, chopped

Preheat oven to 375. 

Line 2 baking sheets with parchment paper. Toss sliced sweet potatoes with olive oil, sea salt and black pepper. Evenly spread out the sweet potatoes. Roast for 25 minutes. Remove from the oven. Turn the oven up to 500 degrees. Toss the sweet potatoes, making sure they are evenly spread out before returning to the oven. Roast for another 7-10 minutes. 

Remove from the oven, carefully taste. Add flaky sea salt if needed. Top with spicy mayo and chopped parsley. 

Spicy Mayo
2/3 cup mayonnaise
3 tablespoons sriracha sauce

Mix together and spread on everything.
