Radicchio salad with balsamic soaked cranberries + goat cheese
Last night I made not only this fast and easy salad but sesame-spiced turkey meatballs from Smitten Kitchen Cookbook. My plan was to share with you the meatball recipe as well, but right now I am too angry at those meatballs. Oh, don't get me wrong, the meatballs are fantastic. A little spicy. Extremely moist. And deliciously seasoned with sesame seeds, cumin and coriander. If only I remembered I didn't have an oven mitt on while pulling them from the 400 degree oven. Ouch! Ok, more than ouch! I spent the remainder of the night, eating dinner, showering (this was fun), feeding Hudson with ice on my hand. So the meatball recipe will have to wait.
This salad however, should not wait. The crunch of the radicchio and red onions with the sweetness of the craisins pairs well with the creaminess of the goat cheese. This salad hits all taste-buds, and I love it. So here it is, enjoy. I'm off to go ice my hand, again.
adapted from: Lidia's Italy
2 pounds radicchio, shredded
3/4 cup craisins
1/2 cup red onion, chopped
3 tablespoons balsamic vinegar
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1 pound fresh goat cheese
In a small bowl, pour balsamic vinegar over craisins and let soak for 15 minutes.
Place radicchio and red onion in a large bowl, pour soaked craisins over top. Drizzle with olive oil and season with kosher salt. Mix together. Crumble goat cheese into salad, tossing as you go. Top with extra goat cheese chunks. Done. Easy. Delicious.
