Avocado Chocolate Mousse
I'm going to make you a promise. This mousse tastes fantastic. It takes approximately 5 minutes to prepare. You will be plesently suprised by the flavor. And you will like it.
The toppings are endless. I went with a coconut whip and flaky salt, as I am a salty sweet girl. Dusting with cardamom, cinnamon, sugar, or cookie crumbs would also work great.

Mousse:
- 2 ripe avocados
- 1/2 cup coconut milk (whole or light)
- 1/4 cup cocoa powder
- 1 teaspoon vanilla
- 1/4 cup honey (or agave)
- 1/8 teaspoon cardamom (or equal parts cinnamom & nutmeg)
- sea salt (per your taste)
In food processor bowl, blend avocado and coconut milk until combined. Add the cocoa powder, honey, vanilla, cardamom and salt, about 1-2 minutes until smooth. Taste and adjust to your likings, adding more honey, salt, or cardamom. Refridgerate until ready to serve.
Coconut Whipped Cream:
- coconut milk (whole or light, although whole works better)
- a few tablespoons of maple syrup (or powdered sugar)
Place can of coconut milk upside down over night in the refridgerator. Open the can, scoop off thick coconut, reserving the remainder for another use. Beat coconut milk and maple syrup until whipped.
